Couscous Friday is amazing...the city stops for prayers and the family meets to eat.
Plenty folks got stoves, but it’s not real traditional food unless the ingredients are individually made in various stews & bouillabaises.
Then Mama Zakiyyah puts it all together in a tagine (traditional Moroccan lidded clay pot) & cooked over an open flame.
We had a side of Kufah (caramelized onions, raisins, cinnamon, butter, peppers served hot over couscous)
